Day 2 of HM DietBet - Hungry Martha's Protein Packed Salad

 Yes!!  Weighed myself this morning and saw a bit of a weight loss. I'm curious to see the night and day difference when I weigh in at my WW meeting tonight. I'm hoping that if I continue to post everyday,  I'll stay motivated and accountable to those of you who visit my humble blog. (And if you're reading this, and are the first to comment I'll send you an ebook cookbook of 32 lowcal recipes.) Day 2 of HM Dietbet and Jennifer D has lost 43% needed to hit her target weight.  You go girl!! We losers need to stick together. LOL

Hungry Martha's Protein Packed Salad
Baby Spinach
Tuna packed in water (your choice)
Hard boiled egg
Red Onion
Mushrooms
Tomatoes
(You can add any veggies you like, I just had these items handy)
Fresh Cracked Pepper
Dressing of your choice - I used Walden Farms 0 calorie, 0 fat, 0 sugar, 0 carbs,  Balsamic vinaigrette

I had to use up my baby spinach from yesterday before it went bad so I started there. BTW, I never have any kind of salad greens go bad, because anytime I see my them get a little too wilted for salad, I cook them, throw them in soup or to cooking rice or plan an omelette for my next meal and use it up there. No waste here.  I was going to use chicken breast again, but saw the tuna in the cupboard. I had grilled off the remaining chicken from yeserday, sliced and portioned each piece in a snack baggie, then put all of them in a freezer bag and popped them in the freezer.  That way in the morning I can take one out and it will be defrosted by lunch to add to my salad or cooked veg........................ You really don't need the recipe for this, do you. And the variations are endless.  Anything in your fridge.  Go Crazy!  I used up my lunch hour posting this so I am going to sneak out of the office for a walk. I think I need to go to the Post Office for some work related reason or other.  Yeah, that's the ticket.
